To Keep In a Snack Box for Surprise Guests

Surprise visits by guests can be a double-edged sword. While you may be delighted at having people you love and care about at your humble abode, there is a constant dilemma of what to serve them as snacks with that steaming hot cup of tea or coffee.

Preparing something in the spur of the moment is not just extremely time-consuming but also makes you lose out on time catching up with your guests. The most common alternative to this is serving chips or other readily available fried foods, which add to those ever-increasing calories.

In this contemporary and extremely busy lifestyle we lead, cutting down on calories is as much a necessity as it is difficult. Hence, one of the healthier options you can resort to when those surprise guests come knocking on your door, is to keep a healthy snack box full of dry fruits ready. These dry fruits can be the tasty treats your guests and you devour instead of the usual high-calorie snacks. Almonds, in particular, can be an ideal dry fruit for such occasions as it is an energy giving food packed with nutrients like Vitamin E, riboflavin and fibre. To top it all, a study published in the American Journal of Clinical Nutrition (AJCN) provides a new understanding of almonds' calorie count, showing that whole almonds provide about 20 percent fewer calories than originally thought.[i]

Here are some mouth-watering and easy snack recipes you can pack in your customised snack-box:

Sweet Chilli Almonds
Serves: 1 cup

Preparation time: 10 minutes

Cooking time: 10 minutes

Almonds whole -1 cup

Egg white - from 1/2 egg

Curry leaves - 2 sprigs

Salt -1/2tsp

Sugar fine grain - 2 tsp

Red chilli powder -1/2tsp

Method:

Place the curry leaves in a microwave and dry them completely on low heat. Crush them in a bowl and add salt, sugar, red chilli powder. Mix well.Add the egg white to the almonds, mix well. The egg white should be just enough to coat the almonds lightly. Now sprinkle the masala and mix well. Spread the almonds on a roasting tray.

In a pre-heated oven cook the almonds for 10 mins at 120c. Remove and allow to cool completely. Keep in an air-tight jar.

Serves: 100gms

Preparation time: 2 - 3 minutes

Anardanachuran - 15

Olive oil - 3 ml

Method:

Roast almonds in a preheated oven at 100o for 8-10 min. While the almonds are hot, add olive oil and sprinkle with anardanachuran. Toss it to evenly dress the almonds with churan

Cool and transfer to an air-tight container.
